Recipe – – Raw Vegan Pizza of Markus Rothkranz

Everybody loves pizza. Markus Rothkranz has a solution for people who chose a more natural based diet than processed. In his cookbook Love on a Plate shows how to make a Raw Vegan Pizza, no preservatives, no chemicals, and no meat. This recipe isn’t easy and it takes a while, so planning this meal the night before “Pizza Night” might be the best. Begin with the longest and complicated part of the pizza: the crust. Then move on to the sauce, cheese, “pepperoni” and finish with the actual making of pizza.

• 4 cups coconut meat (fresh/frozen packaged)
• 1 cup coconut water
• 1 Tbsp. nutritional yeast
• ½ cup ground chia; grind up
• Place ingredients in blender and mix together. Mix until desired consistency is reached. After, place crust mixture onto a dehydrator sheet and spread for either a thick or thin crust. Place sheet into dehydrator for 2-4 hours, then flip over for another 2-4 hour. Once the crust has finished in the dehydrator, the next step is the sauce.

• 1 cup sun-dried tomatoes
• 1 cup tomatoes
• 3 Tbsp. cashew milk
• 1 tsp Apple Cider Vinegar
• 1 tsp Olive Oil
• 2 dates
• 1 clove garlic
• Pinch of sea salt, black pepper, cayenne pepper
Blend together and set aside.

• ½ cup cashews
• 3 Tbsp. pine nuts
• 1 tsp nutritional yeast
• 1 Tbsp Apple Cider Vinegar
• Pinch of sea salt
• ¼ cup of water
Blend together and set aside.

• ½ cup of coconut meat (fresh/frozen packaged)
• 1/3 Irish Moss Gel
o Irish Moss Seaweed blended with water
• 2 Tbsp sun-dried tomatoes
• ¼ cup chopped red bell pepper
• 1 Tbsp. chopped raisins
• ½ tsp red beet
• 1½ Tbsp. soy sauce
Blend together; lightly (Not creamy, leave kind of chunky). Place mixture onto dehydrator sheet in circles to resemble pepperoni. Place sheet into dehydrator for 1-2 hours, flip over for another 1-2 hours. Once finished, it is time to make the pizza. With these ingredients, pizza can either be eaten raw or you can place into dehydrator for 45 minutes to an hour then eat.
